Per my last post, my nutritional focus right now is to incorporate a few large doses of iron into my foods—with some Vitamin C in the same meal to make sure the iron processes into my system as much as possible. I’m doing that through the inclusion of red meat (certainly more than I would normally eat in a week), leafy greens, beans, and many-hued veggies and fruits.
As always, my meal plan is gluten-free, egg-free, casein-free, and soy-free (plus oyster-free, but you know, that’s really not that hard to come by if you aren’t at the coast). It’s also high in vegetables, low in processed foods, moderate in fat, and pretty healthy overall. (Oh yeah, and tasty!)
Sunday
Lunch: Lamb burgers with mustard and caramelized onions, sweet potato fries, and roasted Brussels sprouts
Dessert: Pan-fried mochi with maple sauce and toasted pecans (If you’re new to gluten-free eating, pick up some mochi at your local health foods store and bake or pan-fry it up; then cover it with a savory or sweet sauce. . . . Of course, you could also make it from scratch, but I haven’t gotten that far yet. Anyway, mochi (moh-chee) are Japanese rice-flour puffs. They’re really tasty and are reminiscent of little wheat-based bread treats. I think they are best eaten warm.)
Dinner: Chickpea salad with vegetarian collard greens and raw carrot slices with almond butter
Monday
Make Ahead: Muffins for breakfasts
Dinner: Swedish meatballs (The Whole Foods Allergy Cookbook, p. 104) with fingerling potatoes and steamed broccoli (Freeze half of Swedish meatballs to use as potato topping next week)
Tuesday
Dinner: Dan makes a 3R Meal (Also, roast spaghetti squash for next night’s meal)
Wednesday
To Do: Pick up CSA order!
Dinner: Spaghetti squash casserole (altered to be allergen/intolerance-free and to add greens) and halved grapefruits broiled with raspberry preserves on them
Thursday
Dinner: Falafel, tahini, and cucumber salad with oven-roasted winter veggies (using apple cider vinegar instead of lemon juice)
Friday
Dinner: Girls’ Night Out in honor of Terri
Saturday
Lunch: Jenn O.’s in town! Lunch with her/our college girlfriends
Dinner: Dan 3R Meal
Sunday
Lunch: Salad with pickled beets, goat cheese, pistachios, and champagne vinaigrette
Dinner: Simplicity Circle dinner

Can you tell me more about Saturday’s vinaigrette?
Marianne, I think it will be a simple vinaigrette of champagne vinegar and olive oil. That’s what I ate at the Gluten-Free Girl’s husband’s restaurant (Impromptu Wine Bar in Seattle), and it was really tasty on a similar salad. Lighter-tasting than a balsamic vinaigrette.–SJPA

Liquid Herbal Iron and Alfalfa supplements worked great for me. My iron went up immediately!

Your weekly menus always inspire. I don’t have a gluten allergy, as you do, but you always make me want to branch out and try new things. I’ve got my fingers crossed that you’ll be feeling better soon.
BTW: Did you ever try the coconut milk whipped cream? And if so, how did it turn out?

Soooooo organised! Very impressive. I’ll have to scan it carefully for iron ideas, i’m pretty sure one of my daughters has a tendency to anaemia.

Sounds like a week of great eating, Sally! I hope this works to help out with your exhaustion…it actually kind of scares me that I may have a similar problem (tired all the time, sleeping way more than usual) and I may try a similar solution myself. Let us know if it helps!!

Sally, after running 5 days/week for about 2 years, I started to have trouble having the energy, and motivation, to get anything done. I found that by cutting back my running to 3 days/week, I am a better and faster runner and really enjoy it again. Perhaps in addition to treating your suspected anemia, changing up your exercise routine would help your energy levels. Good luck!

We use cast iron skillets for cooking. It actually does help (except once a month *sigh*).
I hope you’ll be feeling better soon. I hate when I get anemic, I just can’t function at all.

This is a very informative and useful article for me because one of my friends sister is weak is the lack of Iron and anemia. I want to know reason behind it.

just found out that I am anemic and would like a list of food high in iron,B12 etc. I do not want to take any supplement, want to get the iron I need through food…I do eat some meat…not excessive though thank you
